Improve the pricing example page

Fixes #697. That issue came with the billing model update in #248.

I took the opportunity to make this page more practically useful given learnings and actual data since we first wrote it:

• Start with the mental model. It now explains what drives each usage metric and how it grows with scale. For example, a team's shared data is stored once but downloaded by every member.
• We then explain the relevant differences between the Cloud plans, and to consider Enterprise when usage is estimated higher than the Team limits, or is predictable and you want economy of scale.
• We now point out the dashboard Metrics page so users can actually measure usage, rather than just estimate.
• The example is now a project management app instead of a chat app. That way it covers shared team data as well as per-user data. It's also simplified into one table instead of separate tabs to compare and understand the differences better.
• The old Medium and Large examples had 10,000 and 100,000 peak clients and were priced on Pro, which easily exceeds Pro's and Team's 3k and 10k concurrent client limit. They were also above what current customers on these plans use. The new sizes are 1,000, 10k and 100k, and 1M and makes clear which plan would be suitable where.
• Added a table shows how more users, shared data, frequent changes, more data per user, and large rows affect each metric.

Unrelated:

• We now also make clear that S3 storage is enabled on Cloud instances over time by us.

🤖 Claude Code helped with drafting this. I manually reviewed and tweaked. I also used actual billing data from our company brain as a reference for these amounts.
