ci: use actions/checkout v7.0.1 - #2

GitHub runs automatic checks on this repository. The files that list those checks are called workflows. Each check starts by downloading the code with a shared, ready-made step called actions/checkout. Our workflows used an older release of that step (v4). This moves all five uses to the newer release (v7.0.1), so every pichi-vm repository uses the same one.

Approach
It changes five lines and nothing else: four in
.github/workflows/ci.ymland one in.github/workflows/docs.yml. Each line now names v7.0.1 instead of v4. The documentation check only runs after a change lands on the main branch.Verification
