Restructure the READMEs around what/how/install - #31

Both READMEs (English default, Spanish parallel) now follow the same three-part shape: what davcloud does (features and deliberate omissions), how it works (request path, flat layout, byte-for-byte storage, header identity, dav-root mode) and how to install it (build, standalone run, production behind OpenCloud with the systemd excerpt, the proxy.yaml routes and the verification curl). Status trimmed to what is verified today: serving production, 37+10 tests, CI green.
