feat: a lot of codebase organisation - #100

Did a bit of refactoring here: - Moved src/endpoints to src/http/endpoints - Moved everything HTTP related to src/http - Created separate functions for serve, create_app, cors - Split router config across the separate endpoint modules
- remove cli::maybe_cli, replace with cli::run - route everything through cli::run - build app config after parsing args, so help can run without any deps
openapi will be generated with the crate version now
