Add --keep-output to the notebook-strip pixi task so executed tutorial outputs are preserved and only metadata is stripped. Fixes easyscience/dynamics-lib#277

Thanks for the PR! I’d like to keep notebooks fully stripped in Git, since plot and widget outputs can get pretty large and clutter the history.
I've opened another PR to generate the outputs in CI and render Plopp snapshots with the widget controls. It also adds a package installer cell to the notebooks linked from the docs, so they are ready to run in Colab.

notebook-strippixi task now runsnbstripoutwith the flag--keep-output, so the outputs of executed tutorial notebooks are kept and only metadata is stripped.
