- Fix publish workflow: pass SIGN_KEY to sign-maven-plugin
- CI: use official checkout/setup-java actions pinned by SHA
sign-maven-plugin reads the private key from the SIGN_KEY environment
variable, not from the gpg keyring populated by setup-java. Without it
the plugin skipped signing ("key not found") and Central rejected the
unsigned bundle.
Replace the carboneio forks (tracking @main, 58 and 239 commits behind upstream) with actions/checkout v7.0.1 and actions/setup-java v6.1.0, pinned to their commit SHA.
